Irish Buttermilk Scones
Scones, scones, scones and more scones with butter, jam and clotted cream. These are soft, crispy topped, crumbly textured with a sweet melt in the mouth taste.
Preparation time: 20 minutes Quantity: Makes 10 Cooking time: 15-18 minutes
Ingredients
250g / 9 oz plain flour
45g/ 3 oz caster sugar
3 level teaspoons baking powder
45g / 3 oz butter -softened
100g/ 4 oz raisins or glacè cherries
1 egg- large
75g/ 3 fl oz butter milk or yogurt
Method
- Rub together the flour, sugar, baking powder and butter together -until the mixture resembles crumbs
- Add the raisins or cherries
- Mix in the egg, followed shortly by the buttermilk
- Mix quickly to form a dough, once bound together -don’t over work
- Roll on to a floured surface, 2cm thick
- Cut with a scone cutter
- Place on a greased tray
- Either brush with milk, egg wash or leave plain with or without a dusting of sugar
- Bake in a preheated oven gas 6-7/200*c/400*f for 15-18 minutes or until risen and golden
