Mincemeat - Sweet filling for Mince Pies
Store in a cool place until your ready to make mince pies or tart- will keep fresh tasting for several months.
Quantity: Makes 3 Jars Cooking time: 3 hours
Ingredients
90g/ 3 oz suet (beef or vegetarian)
800g mixed fruits i.e. sultanas,
raisins, apricots, prunes, currants and figs etc
110g glace cherries chopped 150g diced peeled apple (2 no)
1 finely chopped rind and juice of lemon
1 finely chopped rind and juice of an orange
225g soft brown sugar
1/8th grated whole nutmeg
1/2 teaspoon cinnamon
1 1/2 teaspoon mixed spice
100 ml /3 fl oz brandy, whiskey or sherry
Method
- Add all ingredients in a large roasting tin, one at a time
- Mix well
- Pour on the brandy
- Place in oven on low Gas 1/150*c for 3 hours
- check every now and then that it doesn’t dry out- add a little liquid if it does.
- Cool off
- Spoon into sterilized jars
