Mint Sauce
A must with Roast Lamb. Experiment with different types of mint, Lemon mint works well.
Mint sauce can also be used as a marinade for lamb chops, leg steaks or roasting joints like shoulder - just mix a few spoons with some fresh black pepper and olive oil
Preparation time: 10 minutes Quantity: Makes 1 jar
Ingredients
2 handfuls of mint leaves
100 ml boiling water
150 ml white wine / malt / cider vinegar
2 table spoons caster sugar
Method
- Wash and chop the mint leaves
- Put in to a bowl and pour on the boiling water
- Leave to seep and soften for 5 - 10 minutes
- Add all else and stir until the sugar has dissolved
- Store in sterilised jars in the fridge till needed
