Horseradish Cream Sauce
If you get your hands on some fresh horseradish, which looks a lot like a celeriac copying a huge long carrot - try this fresh cream it simply beats any other shop bought product and marries well with a joint of Beef.
Preparation time: 15 minutes Quantity: Serves 4 - 6 for a roast
Ingredients
2 tablespoons fresh horseradish
2 teaspoons white wine vinegar
1/2 teaspoon caster sugar
pinch salt
pinch grated nutmeg (optional)
100 ml double cream
Method
- Peel and grate the fresh horseradish (beware the hot stuff seeps out, like fumes of chilli)
- Soak in the vinegar, sugar, salt and nutmeg
- You can make this part ahead and leave in a jar in the fridge till needed
- When needed whip up the cream lightly, till a little aerated but still sloppy
- Spoon in the horseradish mix
- Serve
