Fruit and Seed Flapjacks

A healthier flapjack crammed full of dried fruit and seeds to boost your body power with the added bonus of oats to increase fibre

Preparation time: 10 minutes   Quantity: Makes 12 - 14 portions   Cooking time: 20 - 25 minutes

Ingredients

175g/ 7 oz butter
125g/ 5 oz soft light brown sugar
1/2 teaspoon vanilla essence
75g/ 3 oz golden syrup
350g/ 14 oz porridge oats
60g/ 2 oz raisins
60g/ 2 oz sultanas
30g/ 1 oz mixed seeds
3 - 4 dried apricots - chopped

Method

  • Melt the butter
  • Add the sugar, vanilla and syrup
  • Take of the heat and add the oats
  • Stir in all the fruits and seeds
  • Spoon the mix in to a greased tin
  • Bake in a pre-heated oven Gas 4/180*c/350*f for 20-25 minutes
