Medieval Spit Roast Chicken

Don’t you just fancy sticking a rod through a piece of meat and roasting over an open fire until golden, dripping and tender.

Preparation time: 10 minutes   Quantity: serves 4 - 5   Cooking time: 1 - 1 & 1/2 hours

Ingredients

Basting marinade -
1 tablespoon red wine vinegar
1/2 Seville orange - juiced
5 tablespoons rich red wine
1/4 teaspoon ground ginger
few twists black pepper

Chicken and Seasoning -
1 medium organic chicken – prepared
Seasoning
bunch wild soft herbs of choice (chives, parsley, sage, fennel, tarragon etc)

Method

  • Make the basting sauce by whisking all the ingredients together
  • Salt the chicken well, rubbing 1 teaspoon in all over
  • Stuff the cavity with fresh herbs
  • Brush with the basting sauce
  • Place the chicken on a spit roasting rod
  • Cook over an open B.B.Q or grill
  • Turning ever so often, basting every 10 - 12 minutes until cooked
