Medieval Grilled Quail

Quail has been enjoyed all over the world for century’s. This grilled version is delicious slightly fragranced with lavender and grilled to crispy perfection. Serve with crispy roasted potatoes and some mixed leaves dressed with the meat juices.

Preparation time: 5 minutes   Quantity: 1 quail per portion   Cooking time: 20 - 25 minutes

Ingredients

1 quail per person
15 g melted butter per person
salt
pepper
1/2 teaspoon lavender or lemon thyme per person - finely chopped

Method

  • Split the bird down the middle from the head cavity cutting right down the back, cutting the bonier piece down threw the middle to the back cavity
  • Pull the quail back / push down / flatten – so you end up with a flat piece of bone on bird
  • Brush with the butter
  • Rub salt, pepper and finely chopped herb all over the bird
  • Grill slowly on both sides till golden, crisp and cooked
