Cabbage and Parsnip Soup

An all in one, easy, quick and satisfying winter warmer. You can replace the green cabbage with curly kale or spring greens. Cabbage is packed full of iron and vitamins.

Preparation time: 10 minutes   Quantity: Serves 3 - 4   Cooking time: 20 - 30 minutes

Ingredients

1 large parsnip - peeled and chopped
1/4 green or savoy cabbage - roughly chopped
1 medium / small onion - roughly chopped
2 cloves garlic - crushed or sliced
1 stick celery - chopped
1 & 1/2 pints / 800 ml vegetable stock or water
seasoning

Method

  • Place all the ingredients in a big pot
  • Bring to the boil
  • Simmer for 20 - 30 minutes or until the parsnips are tender
  • Liquidize with a hand blender until smooth
  • Season to taste
  • Serve
