Elderflower Sorbet
Elderflowers grow where ever there is splashes of green, around May - July. You can just reach up and pull them of the tree. The taste is fragrant and subtly flowery and definitely refreshing.
Preparation time: 15 minutes plus churning Quantity: Serves 2 - 3 Cooking time: 5 minutes
Ingredients
1/2 pint / 300 ml water
200g / 8 oz caster sugar
10 heads elderflowers - cleaned with no leaves
1 lemon - zest and juice
Method
- In a large saucepan add the water and sugar
- Throw in the flowers and the lemon zest and juice
- Optional - you could let this stand overnight for added flavour
- Bring to the boil and then
- Simmer for 5 minutes
- Cool completely
- Add to an ice-cream machine and churn until just set
- Freeze until needed
