I made this for a slow cooked pork joint, cooked over 3 hours on the B.B.Q and served in huge baps - smothered with Apple Relish and served with mustard potato wedges.

Ingredients

3 apples - green/sour - cored, peeled and diced
1 onion - peeled and medium diced
100 ml / 3 fl oz cider vinegar or white wine vinegar
80g / 3 oz caster sugar or any brown sugar
seasoning

Variations -
add 1/4 teaspoon mixed spice
and / or
1 tablespoon raisins or sultanas
or
use blackcurrant vinegar instead of cider

Method

  • Add everything together in a thick bottomed pan
  • Boil for 5 minutes
  • Rapid simmer for a further 15 - 20 minutes - until caramel coloured, sticky, a little loose and soft
  • Spoon in to a sterilised jar or two small ones
