Mixed Bhajais (Pakoras)

    Cooking time: 5 minutes

Ingredients

8oz chick pea flour
1/2 medium chopped red pepper
1/2 medium chopped green pepper
1 medium chopped onion
2 medium potatoes chopped
1 1/2 teaspoons salt
1 1/2 teaspoons chilli powder
1/2 teaspoon turmeric
1 1/2 cumin and coriander mix
1 1/2 teaspoon sugar
1 (heaped) teaspoon fresh ginger
1 teaspoon garam masala
1/4 teaspoon of bicarb of soda

Method

  • Add all the chopped vegetables to the flour and little water at a time (mixture should have a dropping consistency).
  • Be careful not to add too much water otherwise the Bhajias will go flat when

you fry them

  • Mix well add 2 dessert spoons of hot oil to mixture
  • Add ? teaspoon of bicarb of soda
  • Spoon small amounts of the mixture into the hot oil
  • Cook for about 5 minutes, or until golden brown
  • Drain off the oil properly by placing on kitchen paper
  • Ensure that the oil is FAIRLY HOT WHEN YOU DROP THE MIXTURE IN, THEN AFTER 1 MINUTE FRY THEM ON MEDIUM HEAT
