Red Lentils
Cooking time: 20 - 25 minutes
Ingredients
4-5 tablespoons of oil
6oz red lentils (thoroughly washed)
1 medium chopped onion
1 teaspoon cumin seeds
1/2 teaspoon garlic
1 teaspoon ginger
1 flat teaspoon chilli powder
1 flat teaspoon turmeric
4 dessert spoons of chopped tomatoes
1 1/4 teaspoons cumin and coriander
1 1/4 teaspoons salt
3 cups of hot water
Method
- When the water in the pan is boiling put in washed lentils and cook for 10 minutes
- Cook until the lentils look mushy
- Put cooking oil in pan
- Add cumin seeds and fry for a few seconds
- When brown add onions and fry for a few minutes then add tomatoes, garlic, ginger, chilli powder, turmeric, cumin and coriander, salt
- Add the mixture to the lentils and cook for 10 - 15 minutes on medium heat
