Spiced Kidney Beans with Potatoes
Cooking time: 10 minutes
Ingredients
4 dessert spoons of oil
1/2 teaspoon cumin seeds
1 small onion
1 teaspoon ginger
3 dessert spoons of chopped tomatoes
1 flat teaspoon of chilli powder
1/2 teaspoon turmeric
1 heaped teaspoon cumin and coriander
1 teaspoon salt
1 dessert spoon of tomato puree
1 large tin of kidney beans (drain and rinse the kidney beans)
1 large potato chopped
Method
- Put the oil in pan
- When hot add cumin seeds, onion, ginger, tomato, chilli powder, turmeric, cumin and coriander, salt, tomato puree, kidney beans and potato
- Add a small amount of water if required
- Mix thoroughly and cook for approximately 10 minutes
- Serve with rice, chapattis, nan bread etc.
