Pelmeni Dough
The Russian equivalent to ravioli, this is rolled out and stuffed with an assortment of goodies and boiled in salted water or stock till opaque, firm and cooked ! Fill with sweet thickened cherries in juice or minced pork flavoured with dill and ginger or minced beef and grated onion etc. etc. etc.
Preparation time: 15 - 20 minutes plus resting Quantity: Serves 6
Ingredients
350g / 12 oz plain flour - sieved
1/2 teaspoon salt
4 egg yolks - large
1 pint / 500 ml warm milk - approx. 37*c
Method
- Add the dry ingredients to a big bowl
- Make a well in the middle
- Meanwhile whisk the eggs and milk together
- Pour in the middle of the flour
- Mixing to form a dough
- Knead for 5 - 8 minutes
- Cover with a damp t-towel and leave to rest for 20 - 40 minutes
- To make Pelmini - roll out on to a floured board, cut in to small circles approx. 2 inch / 5 cm
- Stuff 2/3 teaspoon of mix in to the middle of each one
- Egg wash around the sides (op)
- Fold over to make a half moon, push down the edges to seal
- Simmer for 5 -10 minutes
