How do you pronounce yours ? scones are the quintessential afternoon tea favourite, served with clotted cream and home made conserve.

Preparation time: 15 minutes   Quantity: Serves 8 plus   Cooking time: 15 minutes

Ingredients

250g/ 8 oz plain flour
2 teaspoon baking powder
touch salt
30g/ 1 oz caster sugar
60g/ 2 oz butter -softened
60g/ 2 oz raisins or sultanas
150 ml/ 1/4 pint any milk

Method

  • Double sift the flour, baking powder and salt
  • Add the sugar
  • Rub in the butter - till the mix resembles breadcrumbs
  • Add the raisins and enough of the milk to mix to a soft, roll-able dough
  • Turn out on to a floured surface, roll to approx 2cm thick
  • Cut out 5-8cm circles with a cutter
  • Place slightly apart on a buttered tray
  • Bake in a preheated oven gas 6/180*c for 12-15 minutes
