Boston Brown Bread

A deep colored, heavy loaf, surpassingly soft and fruity in the middle.

Preparation time: 15 minutes   Quantity: Serves 6-8   Cooking time: 2 hours

Ingredients

250g/ 8 oz strong or plain flour
1/4 teaspoon salt
1 teaspoon bicarbonate of soda
90g/ 3 oz currants
90g/ 3 oz black treacle
225 ml / 8 fl oz any milk

Method

  • Sift the flour, add the salt and bicarbonate
  • Stir in the currants
  • Stir in the treacle and mix in the milk
  • Mix by hand to form a dough
  • Knead for a few minutes
  • Place in to a greased 1lb loaf tin
  • Cook in a bain marie (place the loaf tin in a roasting tin 1/2 filled with water )
  • Cook in the middle of the oven gas 3/170*c for about 2 hours or until firm
