Chocolate Pasta - Chocolate Ravioli with a Mascapone, Amaretti and Rum Stuffing
Yes, its true you can make chocolate flavoured Pasta, fill it with an array of sweet fillings and serve with sauces like White Chocolate Cream, Deep Rum Scented Chocolate, Drambuie and Orange Juice or Coffee Bean Syrup. You can’t buy that in the freezer section.!!!
Preparation time: 40-60 minutes Quantity: Makes 6-8 portions Cooking time: 5-6 minutes
Ingredients
PASTA dough -
125g/ 5 oz strong flour (or plain) -sieved
50g/ 2 oz cocoa powder -sieve with flour
2 whole large eggs touch salt
1 teaspoon caster sugar
1 tsp vegetable oil extra flour to roll
Filling -
1 tablespoon dark rum
6 crushed Amaretti biscuits
2 teaspoons light brown sugar
1 pot Mascapone cheese
1 egg yolk
Method
- Sift the flour and cocoa
- Make a well in the middle and add the eggs, oil, salt and sugar
- Mix by hand till you form a sticky dough
- Kneed with a little flour for 3-4 minutes
- Rest in the fridge, covered in cling film for 20 minutes or so
- Put through the highest setting in a paste machine several times
- Then through the next setting, and so on until you have a large, long rectangle
- Place on a floured table
- Cut in to rounds or squares, large or small- your choice
- Place a small spoon full of filling in the middle of one circle, egg wash the sides and place another circle on top
- Push down the sides and repeat until all the filling or all the pasta is used up
- Always cook pasta in a large pan with plenty of boiling, salted water and a dash of olive oil. Fresh pasta cooks in 5-6 minutes
To make the filling -
- Spoon the rum and sugar over the Amaretti biscuits and leave to soak in
- Mix in to the Mascapone and egg yolk
