Pastry - Walnut Pastry
Walnut pastry makes a fantastic base for Vegetarian pasties, or as a nutty base for Quiche, or even try it sweet -fill squares with Ricotta, lemon zest, glace fruits and a egg yolk to bind, fold over, glaze and bake the squares till golden.

Ingredients
200g/ 8 oz plain flour-sieved
100g/ 4 oz butter
125g/ 5 oz ground walnuts
1 medium egg
1 tablespoon sugar- (if making sweet pastry)
milk to bind
Method
- Rub the butter in to the sieved flour
- Add the egg , sugar (optional) and walnuts, mix together
- Add enough milk to turn in to a soft dough
- Rest in the fridge covered in cling film till needed
