Pastry - Sweet Paste

A typical pastry to use for anything sweet.
Soft and pliable to work with and enriched with egg for fuller flavour and a softer finished product.

Preparation time: 10-15 minutes   Quantity: Makes a 1lb mix  

Ingredients

450g/ 16 oz plain flour
340g/ 12 oz butter
150g/ 6 oz caster sugar
2 whole medium eggs
touch salt
milk to bind.
optional flavour

Method

  • Rub the butter in to the sieved flour
  • Add the sugar
  • Mix in the egg and salt
  • Mix in enough milk to mould in to a smooth dough
  • Rest in the fridge, covered before use
