Pastry - Lining Paste

A basic lining pastry, used for lining sweet tarts or pies. Easy to work with.

Preparation time: 15 minutes   Quantity: Makes a 1lb mix  

Ingredients

450g/ 16 oz plain flour
200g/ 8 oz butter
100g/4 oz caster sugar
a touch salt
optional flavouring

Method

  • Rub the butter in to the flour and sugar
  • Add enough water to form a smooth dough
  • Optional flavour- vanilla, lemon zest, cocoa powder etc.
  • Rest in the fridge, covered before use
