African Mandazi - Fried Breads

These are a little like the Indian Poori breads.
Serve with an African Curry.

Preparation time: 15 minutes plus rest time.   Quantity: Makes 12   Cooking time: 10 minutes

Ingredients

5 cardamon pods
450g/ 16 oz self raising flour
3 tablespoons caster sugar
1 teaspoon baking powder
1 medium egg
1 tablespoons oil
225 ml water

Method

  • Remove the seeds from the cardamon pods and crush add to -
  • The sieved flour , sugar and B.P -mix
  • Add the egg and oil - mix
  • Mix in the milk and form a dough
  • Kneed for 5-10 minutes till smooth
  • Roll out on a floured surface, cut in to rounds 3 inch wide, 1/2 inch thick
  • Lay in a warm place to rise slightly - 5-10 minutes
  • Fry, submerged in hot oil - till golden on both sides
