Spiced Potato and Cheese Dumplings / Puffs
A South American side dish, a bit like our Yorkshire Puddings. If you have some left over mash - then these are quick and simple to make.
Preparation time: 15 minutes Quantity: Makes 10 - 12 Cooking time: 30 minutes
Ingredients
450g / 1 lb. mashed potato
1 teaspoon baking powder
30g / 1 oz parmesan cheese - grated
3 tablespoons leaf coriander - chopped
1/2 green chilli - finely diced
3 tablespoons / 50 ml any milk
30g / 1 oz butter
3 eggs - large - separated

Method
- Mix the mash with the baking powder, cheese, coriander and chilli
- Bring the milk and butter to the boil
- Immediately beat in the mash mix and egg yolks
- Take of the heat
- Meanwhile whisk the egg whites until stiff
- Fold the whites gently in to the soft mash mix
- Spoon in to a greased muffin / Yorkshire tin
- Bake in a preheated oven, top shelf gas 6 / 200*c / 400*f - for 20 - 25 minutes until light brown and risen
- Serve Hot
