A traditional potato cake, try serving with grilled bacon for Breakfast.
A good dish to try, when you’ve got some mashed potatoes left over.

Preparation time: 15 minutes   Quantity: Makes 4 cakes   Cooking time: 15-20 minutes

Ingredients

250g/ 8 oz potato - peeled
250g/ 8 oz mashed potato
250g/ 8 oz plain flour- sifted
1 teaspoon baking powder
seasoning
30g/1 oz melted salted butter
125 ml full fat milk

Method

  • Grate the potatoes
  • Squeeze the excess potato juice out of the raw potato in to a bowl
  • Reserve the starchy, white stuff
  • Add the starch to the grated and mashed potatoes
  • Add all the other ingredients and form in to a dough
  • Divide into four
  • Form in to 4 flat cakes
  • Mark each into quarters
  • Bake in a hot oven till light golden
