Eggs / Oeufs En Cocotte

A classic French egg dish, simply eggs baked in the oven with a touch of cream and butter. Perfect with a round of wholemeal toast at breakfast time or served with a piece of baked smoked cod.

Preparation time: 5 minutes   Quantity: Make as needed   Cooking time: 10-15 minutes

Ingredients

1 egg per person
2 teaspoons double cream per person
1/2 teaspoon butter per person
season to taste

Method

  • Crack the egg in a ramekin or small ovenproof dish
  • Spoon on the cream and butter
  • Season
  • Bake in a bain marie ( place the ramekin in an oven tray or dish and half fill the tray with water)
  • Place in a preheated oven gas 4/180*c for 10 minutes to cook under done or 12-13 minutes medium /still runny or 15 minutes for firm
