Scotch Pancakes

Try serving with Orange and Drambuie Marmalade.
You can also add fruit to the mix, like chopped bananas, sultanas, rum soaked raisins, coconut or even chopped nuts, like pecans.

Preparation time: 10 minutes   Quantity: Serves 8 - 12   Cooking time: 6 - 8 minutes

Ingredients

5 oz /140g self raising flour (sieved)
1 oz/ 30g caster sugar
1 medium egg
5 fl oz/ 150 ml/ 1/4 pint milk

Method

  • Whisk the flour and sugar together
  • Whisk in the egg and the milk
  • Hold a little milk back- make to the consistency of double cream
  • Heat a frying pan with a little oil and butter
  • Drop spoonfuls in to the hot fat
  • Cook on each side for 3-4 minutes until golden brown
