Malaysian Coconut Pancake -Lempeng Kelapa
A traditional Malaysian Pancake, could be served at breakfast or an accompaniment to a Malaysian curry.
Preparation time: 5-10 minutes Quantity: Serves 4 Cooking time: 10 minutes
Ingredients
100g 4 oz plain flour- sieved
80g/ 3 oz fresh grated coconut
1/4 teaspoon salt
1 teaspoon sugar
few twists pepper
1/2 teaspoon bicarbonate of soda
125 ml/ 4 fl oz coconut milk
125 ml/4 fl oz water to mix
oil to cook
Method
- Mix all dry ingredients
- Whisk in the coconut milk and water
- Make a batter the consistency of whipped cream
- Heat up an oiled non-stick pan
- Pour a ladle full of batter in to the centre, move round by tilting the pan
- Cook until golden on both sides
