Baked Soft Fruits Stuffed with Oaty Flapjack

A dish that can be used in every season to accommodate that seasons crop.
Variations -add chopped or sliced nuts or bake the fruits with a measure of booze, like Armonac or Contreau or add chopped chocolate to the mix.

Preparation time: 20 minutes   Quantity: Serves 5 - 6   Cooking time: 30 minutes or so

Ingredients

One type or a selection of fruits -
(use enough for 5-6 portions)
plum halves
apricot halves
nectarines halves
peach halves
cross top split fresh figs
halved clementine
halved cored pears
1 tablespoon brown sugar

Flap Jack filling -
60g / 2 oz butter
2 tablespoons honey
60g / 2 oz course oats
1 tablespoon dark brown sugar
1 tablespoon raisins
pinch cinnamon

Method

  • Prepare the fruit and bake with the brown sugar for 10-20 minutes, depending on what and how ripe the fruit is - basically half cook


To make the flapjack filling/topping -

  • Melt the butter and honey
  • Stir in everything else, till well coated
  • Stuff into the fruits (fruits like plums, apricots, peaches, nectarines) or mould a little on top (fruits like pears and clementines) or spoon in the middle (fruits like figs)
  • Bake for 15-20 minutes until the fruits are soft and the flap jack crunchy and golden
