Spiced Chickpea Burgers

Serve in wholemeal baps with salad and tiziki. These veggie burgers can be frozen cooked or uncooked.

Preparation time: 20 minutes   Quantity: makes 4   Cooking time: 10 - 12 minutes

Ingredients

1 tin chickpeas - drained and washed 1 white onion - roughly diced
1 garlic clove - crushed
1 teaspoon fresh parsley
1/4 inch ginger - grated
1/2 red chilli -
1 teaspoon ground coriander
Seasoning
1 egg yolk
60 g / 2 oz bread crumbs

Method

  • Drain and wash the chickpeas
  • Whiz the chickpeas, onion, herbs and spices – till mashed
  • Add the egg and crumbs.
  • Season well
  • Mould in to burgers
  • Pan fry till golden on both sides (can be oven baked or grilled)



Variations – replace with any other tinned beans i.e. cannelloni, borlotti etc.
