Basic Strawberry Jam

I sterilize jars by pouring in boiling water, screwing back the lid and leaving for several minutes or dishwasher on high or place the jars and lids in a large pan covered in cold water, bring to the boil and simmer for 10 minutes. Leave to air dry.

Preparation time: 10 minutes plus jarring   Quantity: Makes 4 jars /1kilo approx. batch   Cooking time: 15 minutes

Ingredients

300g/ 10 oz jam sugar
1 lemon juiced
1 kilo/ 2 lb strawberries

Method

  • Prepare the strawberries -hull and chop roughly
  • Melt the sugar in a big, thick bottomed pan
  • When melted add the chopped strawberry’s
  • Boil, stir and cook for a further 10-12 minutes
  • Skim of any froth
  • Spoon in to sterilized jars
  • Top with a wax disc
  • Cover with a tight lid - leave to cool
  • Label with date and type
  • Store in a cool dark place for months
