Pickled Garlic

I know peeling loads of garlic isn’t fun but pickled garlic goes a long way and if you grow your own garlic its the perfect recipe.

Preparation time: 30 minutes   Quantity: Makes 1 large jar   Cooking time: 10-12 minutes

Ingredients

200g/ 8 oz garlic cloves, peeled
1 red chilli,finely diced
1 pint/ 550 ml white wine vinegar
150g/ 6 oz caster sugar
1 teaspoon ground dry mustard
1 teaspoon celery seed (optional)
4-5 peppercorns

Method

  • Mix the garlic with the chilli - fill in to sterilised jars
  • Boil the vinegar, sugar and spices -simmer for 10 minutes
  • Cool slightly
  • Pour over the garlic
  • Cover with wax discs
  • Seal and store in the fridge, for at least 3 weeks before eating
