Pickling Spice

A much needed additive to the old pickled onions in vinegar. Off course you can always spice it up with a dried chilli.

Preparation time: 5 minutes   Quantity: Makes a 30g batch or so  

Ingredients

5 black peppercorns
1 red chilli,
3 allspice berries
1/4 teaspoon dill seed
1/2 cinnamon stick
2 bay leaves
5-6 whole cloves
1 slice fresh ginger

Method

  • Mix all ingredients together and place in a jar for storage
  • Store in a cool, dark place up to four months
