Tomato and Onion Relish
Preparation time: 30 minutes Quantity: Makes 6 or so jam jars Cooking time: 30 - 40 minutes
Ingredients
2 onion chopped
16o z/ 1lb/ 450g tomatoes roughly diced
16 oz/ 1lb/450g dark brown sugar
1 pint/15fl oz any vinegar
2 cloves garlic sliced
2 tsp grated ginger
1 tsp cinnamon, ground cumin and turmeric

Method
- Add everything in a big pot
- Bring to the boil then simmer for 30-40 minutes
- Taste and correct the seasoning
- Optional - add chilli in at the beginning to spice it up
- Whiz up/ liquidise/ blend – a little–till roughly blended
- Pour in to sterilized jars (dishwasher or boiled water), fill to the top
- Cover with a wax disc
- Seal with a tight lid
- Will keep for 3 months or more, store in a dark cool cupboard
- Once open –refrigerate
