Tomato and Onion Relish

Homemade Relish’s are so easy to make and making a good quantity, gives you enough to share.

Preparation time: 30 minutes   Quantity: Makes 6 or so jam jars   Cooking time: 30 - 40 minutes

Ingredients

2 onion chopped
16o z/ 1lb/ 450g tomatoes roughly diced
16 oz/ 1lb/450g dark brown sugar
1 pint/15fl oz any vinegar
2 cloves garlic sliced
2 tsp grated ginger
1 tsp cinnamon, ground cumin and turmeric
seasoning

Method

  • Add everything in a big pot
  • Bring to the boil then simmer for 30-40 minutes
  • Taste and correct the seasoning
  • Optional - add chilli in at the beginning to spice it up
  • Whiz up/ liquidise/ blend – a little–till roughly blended
  • Pour in to sterilized jars (dishwasher or boiled water), fill to the top
  • Cover with a wax disc
  • Seal with a tight lid
  • Will keep for 3 months or more, store in a dark cool cupboard
  • Once open –refrigerate
