Salted Preserved Lemons

A spiced blend of zesty lemons to use in Mediterranean or Middle Eastern Salads, Tagines, Pasta dishes and Casseroles, just chop up and mix in.

Preparation time: 15 minutes   Quantity: Makes one very large Jam jar or Preserving jar  

Ingredients

1/2 tablespoon whole corriander seeds
1/2 tablespoon whole fennel seeds
1/4 tsp chopped dried chillies (optional)
1/2 a cinnamon stick
10 x peppercorns
3 tablespoons fine sea salt
5-6 juicy lemons

Method

  • Mix the seasonings together
  • Cut the lemons in to quarters
  • Rub the salt mix- well in to the lemons
  • Squash down in to the jar (pack well –leaving no air)
  • Sprinkle a little salt over the top of the lemons
  • Seal the jar with a wax disc and a tight lid
  • Preserve for 3 weeks - 3 months
