Lime Curd
There is another method to make curd- throw it all in a bowl, whisk over a pan of simmering water until thickened.
Try other citrus fruits, or mix with soft fruits.

Ingredients
6 medium-large egg yolks
175g/ 6 oz caster sugar
6 juicy, limes -zest and juice
125g/ 5 oz butter- soften
Method
- Beat eggs and sugar over a bain marie (in a bowl over a pan of simmering water)
- Beat till lighter and a little frothy
- Whisk in the lime juice and zest
- Whisk in cubes of soften butter -till incorporated
- Stir the mix till thickened
