Lemon Curd
There is nothing more delicious for breakfast than thick cut wholemeal bread and fresh Lemon curd. Try using just egg yolks, 12 for this recipe for a richer curd. Look form CookeryClubs Lemon Curd Roulade.

Ingredients
6 whole medium-large eggs
450g/ 16 oz caster sugar
6 juicy, lemons-zest and juice
200g/ 8 oz butter- softened
Method
- Beat eggs and sugar over a bain marie (in a bowl over a pan of simmering water)
- Beat till lighter and a little frothy
- Whisk in the lemon juice and zest
- Whisk in cubes of softened butter -till incorporated
- Stir the mix till thickened
