Pickled Onions Quick and Easy
Look over our other recipe for pickled onions, the other requires a soaking in brine over night rendering them crisper. But this one is a quick and easy way to make a large jar of your favourite pickled friends
Preparation time: 10 - 15 minutes Quantity: Makes 1 large jar Cooking time: 5 minutes
Ingredients
320 g / 12 oz pickled onions - peeled
500 ml / just under 1 pint malt vinegar
1/4 teaspoon mustard seeds
1/2 teaspoon fennel seeds (optional)
1/2 teaspoon coriander seeds
4 black peppercorns
4 whole cloves
1 dried chilli (optional)
Method
- Simply place the onions in a large sterilized jar, squashing them down to fit them in.
- Meanwhile bring the vinegar and all the spices to the boil, simmer for 5 minutes.
- Cool for 15 - 20 minutes.
- Pour the vinegar over the onions, fill to the top.
- Cover with a wax disc (optional).
- Screw on a tight lid.
- Leave some where cool and dark for a minimum of 6 weeks.
