Butterscotch Creams
Yummy, butterscotch sweet’s packed full of creamy chewiness. When making boiled sugar sweets you really need a Thermometer and constant Adult supervision, the sugar gets hotter than boiled water and the mix will stick to the skin - very dangerous.
Preparation time: 10-15 minutes Quantity: Makes approx. 20 Cooking time: 10 minutes
Ingredients
200g / 8 oz demerara sugar
50g / 2 oz butter
75 ml double or whipping cream
75 ml water
1/4 teaspoon vanilla
Method
- Place all the ingredients in a heavy bottom pan
- Heat till the butter is melted and the sugar dissolved
- Bring to the boil - boil till the mixture reaches 155*c - hard crack stage
- Pour in to a greased tin approx. 5 inch
- Leave aside till nearly set, score in to squares
- Set till hard and cool
- Cut in to the squares and store in greaseproof paper
