A creamy caramel hard to the touch and chewy to the taste. Wrap individually in little sweetie wrappers and give as presents.

Preparation time: 10 -15 minutes   Quantity: Makes 24 or so   Cooking time: 10 minutes

Ingredients

200g / 8 oz soft brown sugar
75g / 3 oz butter - diced
100 ml single cream
1/4 teaspoon vanilla essence
1 tablespoon water

Method

  • Place all the ingredients in a heavy bottom pan
  • Heat until the butter is melted and the sugar dissolved
  • Bring to the boil - boil till the mixture reaches 120*c -hard ball
  • Pour in to a greased tin 5-6 inch
  • Leave aside till nearly set, score in to squares
  • Set till hard and cool
  • Cut in to the squares and store in greaseproof paper
