Turkish Delights

You can vary the Delights by making orange, lime, vanilla or pistachio ones -just replace the rose water and lemon juice.

Preparation time: 10 minutes plus cooling time   Quantity: Enough for 8 or so   Cooking time: 5 minutes

Ingredients

10 leaves gelatine
450g/ 16 oz caster sugar or loaf
120 ml/ 5 fl oz water
2 fresh lemon juice
2 teaspoons rose water
1 tablespoon cornflour
1 tablespoon icing sugar (pref. non absorbent)

Method

  • Soak the Gelatine in cold water
  • When soft, squeeze out the excess water
  • Meanwhile boil the water, lemon juice, rose water and sugar -
  • Add the gelatine- dissolve
  • Pour in to a cling film lined container
  • Cool- refrigerate
  • Cut in to 1 inch dice
  • Roll in the icing sugar and cornflour mix
