Marshmallow Coffee Fudge

A simple quick delicious sweet fudge to make with a responsible adult!!!

Preparation time: 10 minutes   Quantity: Makes approx. 1lb fudge   Cooking time: 10 minutes

Ingredients

60 g / 2 oz light brown sugar
60 g / 2 oz butter - diced
2 tablespoons double cream (or whipping)
120 g / 4 oz white marshmallows
1 tablespoon camp coffee (or 2 teaspoons of instant)
90 g / 3 oz icing sugar

Method

  • Boil the brown sugar, butter and cream in a heavy bottomed saucepan for 6 - 7 minutes, stirring occasionally to make sure the mix does not burn before the butter is melted or the ingredients stick to the side
  • Add the marshmallows and coffee and simmer for a minute or two until the marshmallows are melted and the mixture is well mixed
  • Stir in the icing sugar and cool slightly
  • Pour in to a greased tin / dish approx. 5 - 6 inch
  • Leave to set
  • Cut in to squares and enjoy
