Australian Style Sausages Kangaroo (but you can use lamb) with B.b.q Marinade

Kangaroo is a lovely meat, I’d love to see it more in England, and these Sausages combine traditional Aussie Meat with the B.B.Q.

Preparation time: 1 hour +   Quantity: Makes 10 - 12   Cooking time: 10 - 15 minutes

Ingredients

1 finely diced white onion
1 clove crushed garlic
2 teaspoons dark soy sauce
2 teaspoon tomato puree
1 teaspoon course grain mustard
1/2 teaspoon chilli powder
2 teaspoon dark brown sugar
2 teaspoons red wine vinegar
1 teaspoon ground ginger
500g kangaroo or lamb
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper

Method

  • Bring to the boil the onion, garlic, soy, puree, mustard, chilli, sugar, ginger and vinegar
  • Simmer for 1-2 minutes and cool
  • Mix in to the meat
  • Add all else and leave to infuse the flavour for at least 20 minutes or overnight
  • Stuff in to soaked sausage skins- see chocolate sausages
