Lemon Tray Bake
This is just gorgeous - soft almost doughy pastry on the bottom topped with a lemon curd tasting, spongy goo in the middle with a thin crisp sugary top - oh!!!!!!
Preparation time: 20 minutes Quantity: Makes 12 squares Cooking time: 30 minutes
Ingredients
Pastry / Biscuit Base -
225 g / 8 oz plain flour - sieved
50g / 2 oz icing sugar
180g / 6 oz salted butter - softened
splash of water if needed
Topping -
400g / 12 oz caster sugar
30g / 1 oz plain flour
1/2 teaspoon baking powder
1 lemon - 1/2 grated and all the juice
Method
- Add all the ingredients for the base together and mix with a wooden spoon, by hand or in a electric mixing bowl until it forms a dough
- Push the soft dough ball in to a greased tray / tin approx. 8 x 10 inch and 1 inch deep
- Set aside
- Whisk all the ingredients for the topping together and pour over the base
- Bake in a preheated oven gas 4 / 175*c - for 30 minutes
