Teriyaki Sauce / Glaze / Marinade

A simple adaptable sauce which goes extremely well with oily fish. Use as a marinade for chicken and turkey or as a glaze for B.B.Q foods.

Preparation time: 5 minutes   Quantity: As needed   Cooking time: No cooking required

Ingredients

Use equal quantities of -

sake, mirin or dry white wine
mirin or sherry
caster sugar or clear honey
soy or tamari sauce
(use dark for a dark marinade or light for a dip)

Portions -
For 1 use a teaspoon
For 2 - 3 use a tablespoon
For 5 - 6 use a 30 ml drinks measure
For a crowd 30 or more use a cup or teacup
