Mirin is a sweet Sake and Sake is a rice wine, drunk to accompany Japanese food hot or cold, but also used in dips and marinades - found in ethnic shops and some supermarkets

Preparation time: 10 - 15 minutes   Quantity: Serves 4 for starters   Cooking time: 6 - 8 minutes

Ingredients

220g / 8 oz fresh tuna
1/2 lime juice
1 tablespoon Mirin or Sake
1 tablespoon tamari or soya light sauce
1 teaspoon grated ginger
8 spring onions

Method

  • Cut the tuna in to approx. 3 cm dice
  • Marinate in the lime, mirin, soy and ginger for 30 minutes
  • Trim the spring onion top and tail, cut in to four strips each
  • Thread the tuna and spring onion, equally on to 8 soaked bamboo skewers
  • Reserve any remaining marinade to brush while grilling
  • Grill or B.B.Q the kebabs for 6 - 8 minutes tuning every minute or so
