Waffles II - The Light American One

This is my Favourite they come out quite light so are good served with anything - try sliced bananas, chocolate sauce and vanilla pod ice-cream or a simple toffee dip or some run flamed pineapple and double cream.

Preparation time: 15 - 20 minutes   Quantity: 6 - 8 depending on machine  

Ingredients

200 g / 8 oz plain flour - sieved
40 g / 1&1/2 oz brown sugar
1/4 teaspoon salt
1 teaspoon baking powder

250 ml milk (any)
75 g / 3 oz melted butter
2 egg yolks
1 teaspoon vanilla extract or double essence

2 egg whites (from above)

Method

  • Mix all the dry ingredients together in a large bowl - flour, sugar, salt and baking powder
  • In a bowl whisk the wet ingredients together - milk, butter, vanilla and egg yolks
  • Whisk the wet ingredients in to the dry until smooth
  • Meanwhile whip up the egg white until firm, soft peaks
  • Gently spoon the meringue whites in to the waffle batter, trying not to loose air
  • You can use this batter straight away or rest in the fridge for an hour or so until needed
