Mashed Banana Fritters with Cinnamon Sugar

Gorgeous little morsels of sweet banana fritters. could be used as a great party, hand round dessert. Or serve with coconut ice-cream and some syrup!

Preparation time: 10 minutes   Quantity: Serves 2 or 4 as a garnish   Cooking time: 5 minutes

Ingredients

2 bananas - just ready and ripe
30g / 1 oz plain flour - sifted
1 teaspoon light brown sugar or any white
1 pinch dried yeast - (1 - 2g)
1 pinch salt - (1g)

oil to deep fry

To dust -
1 tablespoon caster sugar
1/4 teaspoon ground cinnamon

Method

  • Mash the banana with a fork
  • Add the flour, sugar, yeast and salt
  • Mix to make a soft, damp pureed batter
  • Fry tablespoonfuls in a hot deep fat fryer or wok until golden on all sides
  • Shake of excess fat
  • Toss in the sugar and cinnamon mix
