Golubtsy - Cabbage Rolls
Russian food is comforting, filling and extremely warming. There was a fantastic rustic Russian cafe just down the road from me which unfortunately shut down due to lack of local support. She used to make the best pancakes, pelmini and golubtsy.
Preparation time: 20 minutes approximately Quantity: Serves 4 main or 8 as a starter Cooking time: 40 - 60 minutes
Ingredients
8 outer cabbage leaves (green or savoy)
100g / 4 oz wild rice (or plain)
1 onion - finely chopped
450g / 1 lb minced pork
1 clove garlic - crushed
1 tablespoon dill

Method
- Peel of the outer leaves of a cabbage, disregard any damages leaves
- Cut of the hard stalk in a triangle, leaving the soft green leaf
- Meanwhile bring a pan of salted water to the boil
- Add the cabbage leaves
- Boil for 3 minutes to soften the leaves
- Remove and refresh in cold water (place in a bowl of cold water to cool down or run cold water in to the pan till cooled)
- Meanwhile cook the rice in cold salted water till tender
- Drain
- Mix the rice and the rest of the ingredients together for the stuffing and season well
- Place approx. a tablespoon of mix in the middle of each cabbage leaf (cabbage placed curled up/ outside of the leaf on the table)
- Use all the mix up, so all have equal stuffing
- Wrap the leaves over to form parcels
- Place neat side up in an ovenproof dish
- Pour on the cooking liquor
- Cook in a preheated oven gas 6 / 180*c / 350*f for 30 - 40 minutes
