Aubergine Caviar
A poor mans Caviar and in my opinion a lot tastier, sorry the real macoy not for everyone. Serve with toasted flat bread or warm fresh granary bread and butter
Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 20 minutes
Ingredients
1 aubergine
2 plum tomatoes - skinned and chopped
1 tablespoon olive oil
1 onion - finely chopped
1 clove garlic - crushed
4 tablespoons water or white wine
seasoning
Method
- Cut the aubergines in half length wise
- Grill the black side for 5 minutes till charred
- Peel of the skin
- Chop the aubergine flesh in to small pieces
- Heat the oil in a pan
- Gently fry of the onion cooking till soft but without colour
- Add the garlic and aubergine
- Cook for approx. 5 minutes till soft
- Add the tomatoes and water
- Cook till all the water has absorbed, the mix is soft and paste like
- Season to taste
- Cool and serve
