Boerewors Style Sausages - Traditional South African Farm House Sausages
My friend told me about these sausages and I found a local butcher from south Africa who made them- there meaty and robust and quite peppery.
I came up with this recipe for them that works well with Yellow rice and spicy chutney.
Preparation time: 1 hour + Quantity: Makes 8 - 10 portions Cooking time: 10 - 15 minutes
Ingredients
250g minced pork
250g minced beef
50g minced bacon
1 clove garlic
1 teaspoon grated nutmeg
1/2 teaspoon coriander
1/2 teaspoon cloves
1 teaspoon dried thyme
1 teaspoon allspice
1 tablespoon red wine vinegar
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper
Method
- Mix all the ingredients together, squeezing all the flavours together with your hands
- Leave to infuse the flavour for at least 20 minutes or overnight
- Stuff in to soaked sausage skins- see chocolate sausages for method
