Baked Crusted Mussels

It is better to use new Zealand green open cup mussels for this, but small cooked ones left in half their shell will do fine. (Obviously you will need to use 2 –3 times the amount)

Preparation time: 10-12 minutes   Quantity: Serves 4 as a starter   Cooking time: 15 minutes or so

Ingredients

12 large Mussels

Stuffing :-
50g/ 2 oz butter
½ onion finely chopped
2 crushed clove garlic
2 tablespoons fresh herbs
50g/ 2 oz breadcrumbs
30g/ 1 oz grated Parmesan

Method

  • Pan fry the onion and garlic in butter until soft
  • Cool
  • Add all other ingredients and spoon onto each mussel (still in the half shell)
  • Bake in a hot oven until melted approx. 10-15 minutes
